How to Disable Sending Playback Data to Plex
Plex recently put out an update that allowed them to collect data from your media sever. This update also gave Plex the right to share the content you watch to your friends and family members. Unless you read all the information during each update/upgrade, you have no idea that you need to opt out of these settings. Below is the instructions to opt out of these new settings.
Disable Discover Together Sharing
Step 1: Log into app.plex.tv through a web browser.
Click the Sign In link in the upper right corner of your browser.

Click the Continue with Email button or the method you normally select to log into your Plex account.
Step 2: Select your profile photo in the top-right corner of the screen, then select "Account Settings."
Step 3: Scroll down to the Settings section and click on the Edit link next to Account Visibility & Activity Sharing.
Step 4: Make sure all options are set to Private. Account Visibility defaults to "Anyone," with "Friends Only" currently being the most restrictive choice. Click the Save button to save these changes.
Disable Sending Playback Data to Plex
Step 1: Log into Plex.tv through a web browser. Click the Sign In link in the upper right corner.
Enter your Username and Password and click the Sign In button.
Step 2: Navigate to the following URL: https://www.plex.tv/about/privacy-legal/privacy-preferences/#opd
Scroll down until you see the Optional Playback Data.
Scroll down until you see the Optional Playback Data.
Step 3: Under "Optional Playback Data," you will find "Send playback data to Plex."
You will notice a check in a square box enabling Plex to collect your playback data.

Step 4: Uncheck "Send playback data to Plex"
Now you should feel safer that your media or the type of media you watch is not shared across the Internet.
